Ingredients

For the Cake

  • Dark cooking chocolate - 150 gm
  • Unsalted butter - 90 gm
  • All-purpose flour - 30 gm
  • Granular Sugar - 50 gm
  • Eggs - 3 (whites and yolks to be separated)
  • Raisins - ¼ cup (optional)
  • Cashew nuts - ¼ cup (optional)

For the Cream

  • Milk - 3-1/2 cup
  • Cream -  ½ cup
  • Sugar - 1-1/2 cup
  • Cinnamon -  ½ Tsp
  • Cardamom seeds, crushed - 45

Method of Preparation

Prepare the cream at the very beginning. For this, first cook the milk on low heat until it is reduced a little bit. Now add the sugar and cream and cook it for another 5 minutes. Finally, add the cinnamon and cardamom to the concoction. Let the cream cool. outside or in the fridge.

Now for the cake. First, melt the chocolate with the butter in a double boiler. Whisk to combine the butter and chocolate together. Now, take it off the heat. Next, you are to whisk in the flour followed by the egg yolks.

Take a separate bowl to whisk together the egg whites and sugar together. Whisk until it has got firm peaks but is not yet stiff. Fold this mixture gently into the chocolate mixture. Add the cashew nuts and raisins if you wish.

You can take some individual souffle molds or ramekins. Generously grease them. Pour in the cake batter and bake it in the oven at about 150 degrees. It will take around 10 to 12 minutes for the cake to rise perfectly and have a gorgeously gooey center.

Take it out of the mold and serve it with cool spicy cardamom cream.

This dessert alone has the ability to make your Christmas dinner memorable.
